There’s something about the commercial stuff - presumably they use whatever’s cheap, but it’s always either dry or slimy.

I use lots of carrots and onions with a pinch or ten of herbs in equal-ish volume to cabbage with good mayonnaise and proper seasoning and a bit of Greek yoghurt for the lactic acid you get with pickled cabbage before the cabbage breaks down

I do a red cabbage slaw with apple and nuts too as a change
