Knew there was something I was supposed to do…

Turned out (very) slightly on the dry side, but perfectly edible. Tastes every bit as good as I remembered! Next time will just use the final temp for the duration. Well worth the bit of effort it takes. Keeps very well too - which is just as well, as it’s also pretty rich. You wouldn’t be polishing it off in a single sitting without a lot of help!
