Well I can happily report that brioche has been added to the list of fings wot I can do. Not difficult, admittedly, just never got round to it before.
The next - and far more difficult - step is a GF version.

Tried the freeform approach this time. Still looking for a feasible GF recipe (ie one that isn’t going to entail a trip round about a dozen shops looking for some obscure ingredient that I’ve never heard of)

My own fault - I shouldn’t be so lazy when typing!
Found a recipe that is remarkably similar to the ones I’ve made - just an extra egg and butter and a tsp of xanthan gum. The problem now is sourcing GF bread flour; plain doesn’t work (I found out the hard way…). No one seems to stock it locally.
Try a pharmacist for gluten free flour
My friend G stocks it for folks who have it on prescription
