I use the late Gary Rhodes’ recipe and even when multiplying it up one extra egg white works to give you puffy crispy puds

And toad in the hole that climbs up to hit the top of the remoska

Please note lack of moultage of pumpkin seeds.

The solution is glue. Specifically, half a teaspoon of cornflour mixed with 120ml water, boiled until syrupy and reduced by about half. Brush on before and after chucking the seeds at the rolls.
