I have a question for the collective wisdom of the cellar, as follows:
I have been asked to make dumplings. Last time I made dumplings, they sank like stones and when investigated, seemed to have the consistency of stones as well, so I am not entirely optimistic, but I will try again because I am like that.
Anyway. I bought some Atora to make a steak-and-kidney pudding, and discovered when I got it out of the cupboard that its BBE was July 2025. There is also an opened packet whose BBE was June 2025.
Is either of these likely to produce reasonable results, or do I need to rush out and buy some which is still In Date?

Probably too late, but I’d say the unopened packet would be fine. The trick is to mix quickly and handle minimally/lightly.
Mind you, I’ve made cannonballs before now myself…

A compromise was reached: I make dumplings, they go into a stir-fry soup, and if they are ok then I make dumplings to go in the stew. If they are not ok then I buy new suet.
This was complicated by looking up cheese dumplings because they were mentioned by one of the dumpling gurus on the internet, and discovering they can be made on a baking tray in the oven. Isn’t that cheese scones? I am now utterly bewildered.
I am sitting on the fence waiting to hear about these ‘ere dumplings.
I wouldn’t have thought that stirfry soup was heated for long enuff to cook dumplings meself.
Wet dumpling mixture, plus wet hands, &, as wor Gus said minimal handling.
