You don’t absolutely need a mandoline (have you considered the possibilities of a ukelele, though?).
There is a no-faff method which I favour. Make the dressing, heavy on the lemon juice. Grate the celeriac coarsely and fast, mixing it into the dressing as you go. Doesn’t discolour at all!
