3 carrots, 2 sticks of celery, 1 onion, 1 clove garlic, 1 red pepper, 1 green pepper anna bag of spinach to wilt in at the end have made a really good soup.

2 slices of 3 cheese bread with butter fer later

Sounds good, Carinthia.
Wor cauli soup:
• 1 large head cauliflower (about 2 pounds), cut into bite-sized florets
• 3 tablespoons extra-virgin olive oil, divided
• Salt
• 1 medium red onion, chopped
• 2 cloves garlic, minced
• 1 L veg stock
• 2 tablespoons unsalted butter
• 1 tablespoon fresh lemon juice, or more if needed
• ¼ teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 210C. Toss the cauliflower with 2 tablespoons of the olive oil. Arrange the cauliflower in a single layer and sprinkle lightly with salt. Bake until the cauliflower is tender and caramelized on the edges, 25 to 35 minutes, tossing halfway.
  2. Once the cauliflower is almost done, in a soup pan warm the remaining 1 tablespoon olive oil over medium heat. Add the onion and ¼ teaspoon salt. Cook, stirring occasionally, until the onion is softened and turning translucent, 5 to 7 minutes.
  3. Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds, then add the broth.
  4. Then transfer the cauliflower to the pot. Increase the heat to medium-high and bring the mixture to a simmer, then reduce the heat as necessary to maintain a gentle simmer. Cook, stirring occasionally, for 20 minutes.
  5. Remove the pot from the heat and let it cool for a few minutes. Add the butter and blend until smooth. Add the lemon juice and nutmeg and mix.
  6. Season to taste.

Parmesan crisps would w#rk with this, but I have no idea…

Sounds delish, Soobers, may I copy it to the veg cooking thread?

I have all the ingredients except nutmeg. I wonder what I might use instead. I have ground cumin, coriander and caraway as well as garam massala.

I don’t have any cinnamon.

I think that a small amount of ground cumin added to the fried onion at the same time as the garlic would be good, Janie.

That’s what I would use as a substitute in this instance.

Soo’s soop soup does indeed sound delicious, and worlds away from the Crème Dubarry the Dad once foisted on us. I still twitch faintly at the thought of that. Bleugh.

Thanks, both, I like cumin, will do that. Now, if I can get Mr Janie to like it, that will be progress. He’s not very fond of cauliflower.

Can you believe it, people in Ottawa are complaining they are having to wait four or five days for their online grocery orders. Spoilt, that’s what we are.

No, you have to wait for the delivery slot, then a person goes round your local store and grabs off the shelves whatever of your order is available. There’s no central system. So you take pot luck if what you order will arrive, but I’ve so far, in my two online orders, had about 80 per cent, I’d say, with some substitutions.

Until Covid-19, online grocery orders were not used that much. I suppose we are addicted to the almighty car.

Oh, one funny thing, the police were called to our very sedate neighbourhood because - it was reported - there was a ‘street party’. Turned out it was a group of neighbours, each standing in their own driveway, talking to each other, well, shouting, probably. OK, they had drinks in their hands. The police just said make sure you don’t stand on the sidewalk with your drinks and left them to it. What a waste of time!

I just participated in a similar scene with neighbours across the way and next door. Sans drinks, though. Perhaps we could improve on that.

Today, I am being grateful. OK, I can’t go anywhere other than for one walk a day straight out of my front door but it is a fabulous walk, along a tiny road down to a beautiful tiny, pebbly bay. Two miles there & back and with 2 steep hills to keep me fit.
