There were huge, ripe blackberries in the pub car-park on Friday, and we meant to have blackberry crumble yesterday – but other food intervened. The blackberries went into the freezer.

Bread proving and plums and apples prepped and macerating in a mix of soft brown and caster sugars
A good macerate helps flavour I think
There will be demerarra sugar in the topping to pick up the treacle-ey flavour in the brown sugar
