I have no idea how the Filf do their baking, and isn’t it a little early to be drinking?
More or less; but it’s a much lower hydration than poolishes I have encountered (this is 29g fluid to 50g flour.

After three turns, plus resting, the laminated dough is showing considerable resistance to the concepts of ‘rectangle’ and ‘30x40 cm’

It has been shoved back in the fridge to think about what it has done, while I go for a fag.
