Re salty sossinges; our suppertime friend was brought up in South Africa and developed a yen for lots of salt. To my taste, the curry was well seasoned, but I know that she likes to add a bit of salt and so placed it within her reach. It was employed. Sigh (not really).

I always season & taste, but never too much, during the cooking process, but I had 2 adults who would deploy the salt without tasting, & that drove me mad.

Having spent some years there, Himself was of the opinion that if you could still taste the main ingredient the Saffes would find it under-seasoned.

I have a sufficiently high regard for my friend that she can, almost, get away with murder. I also taste and season during the cooking process and one of the reasons I made the curry last night was in order to develop the flavours so she may not need to deploy the salt. An experiment, perhaps. Well, it bombed and we remain firm friends and I’ll continue to add a ‘sweetener’ to her coffee.
