Calling any broccoli-haters in the Cellar. Roll up, roll up for yer lovely steaming bowls of broccoli soup. Made by me own fair hands. Wiv broccoli. And which tastes of - nothing at all. Not even broccoli. Especially not broccoli.
Possibly - although I would always fight shy of unfried spice - but not the direction I want to take it. Five spice is excellent in its place, but I feel my failed broccoli soup is not that. Lemon juice is also a great ‘lifter’, I find.

Replying to your soupy needs, but with little knowledge at all, Gus…I think that umami flavour is that which your broccoli soup may lack. Soy sauce or Parmesan cheese might w#rk, although I favour Grana padano. Flat acid flavour wouldn’t do for me.
A spot - talking teaspoonsful here - of lemon juice can lift without a flat acid flavour in many situations.
Broccoli soup, my one anyway, isn’t designed to be all umami at one. But tasting of its main constituent would be graceful of it. It normally does.
The oven fan - I have bread in - is making Alarming Noises now. I shoulda stood in bed, quite frankly.
